How to text-edit?

There are quite some games I'd like to translate into German, but I can't seem to find a proper text editor! Anyone out there who would be able to help me out and, perhaps, give me some instructions?
By the way, in Germany we also use "ä", "ö", "ü" and "ß", which I could write as "ae", "oe", "ue" and "ss", but I'd rather try to write around it. If it's inevitable, what do I do?

If the game doesn't contain those letters then you have to hack it to include them. If there are standard English letters that aren't used in your language, you can "replace" them. For example, you could edit the letters "y" and "z" (rarely used in German) to look like "ä" and "ö", so long as they aren't needed. If the game has other space characters in the font, there is more room for adding new letters.
If you can't find the text in the ROM, try RomSearcher. If the text is not easily found, you may need to hack the game to find it (it may be compressed).
